The food health surveillance has as objective the quality control of food
and related services, aiming the preservation and promotion of the health
of the population, according to the opinions of the Single Health System
(Sistema único de Saúde - SUS).
In São Paulo, the inspection of the establishments that commercialize
food is conducted by theCoordinationofHealth Surveillance (Coordenação
de Vigilância em Saúde - Covisa), of the Municipal Secretary of Health
and, in a decentralized way, by the Inspections of Health Surveillance
(Supervisões de Vigilância em Saúde - Suvis).
The inspection activities are regulated by the Municipal Law nr. 13725,
of January 9 of 2004 and by the Municipal Ordinance nr. 2619, of December
6 of 2011, which approved the regulation of good practices and control of
sanitary and technical conditions of the activities related to the production
and distribution of food, (SÃO PAULO, 2004; COORDINATION OF
HEALTH SURVEILLANCE, 2011).
In relation to the working environment in kitchens, the Ordinance nr.
2.619/11 requires the insurance and maintenance of the thermal comfort
by means of natural openings (air coming from windows, Venetian blinds)
or ventilation and air conditioning systems, imposing some restrictions on
installation and use, with the objective of avoiding the contamination of the
work environment and exposed food.
It is forbidden the use of fans in areas where activities of pre-preparation,
preparation and packaging of food are performed. It is also forbidden the
use of air conditioners with spray of mists in the same areas as well as in the
areas where ready to eat food is exposed for consumption.
