As this process follows clear scientific methods, it makes sense to stay
away from costly assumptions and guessing games, and do it right the first
time. The HACCP approach adheres to the following principles:
1. Conduct a hazard analysis.
2. Determine the critical control points.
3. Establish critical limits for each critical control point.
4. Establish a system to monitor control of the critical control points.
5. Establish the corrective action to be taken whenmonitoring indicates
that a particular CCP is not under control.
6. Establish procedures for verification to confirm that the HACCP
system is working effectively.
7. Establish documentation concerning all procedures and records
appropriate to these principles and their application.
By connecting control activities to critical control points (CCP), you
identify opportunities to prevent, eliminate or reduce risks. Each of these
CCPs has been assigned a control limit that is regularly monitored to ensure
corrective actions are immediately taken in the event of a deviation fromthat
set limit. Verification and validation procedures must also be established to
confirm that the HACCP plan is being implemented as designed and, if
so, that it is effective at controlling the known significant hazards. Lastly, a
record keeping system must be established.
