Program?
Establish a water management team
Describe how water is processed and used in the potable water system and
the utility water system
Produce process flow diagrams (PFDs) with processing steps named and
numbered for the potable water system and the utility water system.
Using both PFDs, systematically analyze hazards and characterize the risk
for each processing step
From the hazard analysis summaries, decide what, if any, additional hazard
control is necessary
Designate locations at which additional hazard control is applied Critical
Control Points (CCP)
For every CCP, specify the control limits, monitoring method, frequency
and corrective actions
For every deviation from the control limit, the specified corrective action
must be performed and logged
From hazard analysis summaries and risk characterization summaries,
decide validation criteria and verification schedule
Validate that hazard control has been effective under operating conditions
Verify and document that the HACCP BuildingWater SystemManagement
Program is being implemented according to plan
