For every CCP, the Water Management Team is required to specify the
following:
1. Critical control limits
2. Monitoringmethod
3. Frequency of monitoring
4. Corrective actions
Examplesofcritical control limitsarethetemperaturerangespecification
on a water heater and the chlorine residual measured at a chlorine injection
point.
Monitoring refers to the physical/chemical measurements of the hazard
control agent itself, such as for example, chlorine or chlorine dioxide.
The team must specify what method they will use and how often it will
be measured. Note that monitoring does not refer to tests for
Legionella
bacteria in building water samples.
Corrective actions specify exactly what will be done if monitoring
results indicate that a critical control limit has been violated. For example,
a corrective action specification might require that if chlorine residuals
are not within specifications, then an individual is required to check the
chemical feed and report to the Water Management Team within in 1 hour,
for instance. All corrective actions must be documented in a Corrective
Actions Log.
Corrective actions are undertaken in response tomonitoring the critical
limits at CCPs. Note that corrective actions are not that which is done in
