Hazard Analysis Summaries and Risk Characterization
Each named and numbered step from the process flow diagram (PFD)
must be analyzed by the Water Management Team as follows:
1)What is the name andnumber of the processing step correlating to the PFD
2)What are the potential hazards at this step in the buildingwater system?
3) Does the team consider the risk of these hazards as significant
(Yes or No)?
4) What was the basis for that risk characterization decision by the
HACCP Team?
5)What controls are being applied or could be applied at that processing step?
6) Is control at that step critical (Yes or No)?
The HACCP teammust continue in this way to discuss each processing
step in the building water system identified in process flow diagrams for
both the potable and the utility (non-potable) water systems.
